Japanese Curry


Personally, my favorite type of curry.  It's fairly simple to make and it tastes delicious as leftovers.  I usually just have potatoes and chicken, but you can also add carrots and celery.  The smaller you cut the chicken and potatoes the more flavor they will absorb and less dry they will be.

Ingredients:
  • 3.5 oz package of curry sauce mix (either Golden Curry or Vermont Curry brand)
  • 3 potatoes (peeled and cubed)
  • 4 boneless/skinless thighs (cubed)
  • 1/2 Onion (minced)
  • 2 cups rice (Asian med-grain [example])
  • 1 Tbspn Olive oil
Directions:
  1. Start to cook rice with 2.66 cups of water
  2. Saute chicken and onion until chicken is browned 
  3. Add garlic powder & black pepper to taste
  4. Add potatoes (cook for 15 min)
  5. Add 2.5 cups of water (bring to a boil, simmer and cover for 10 min)
  6. Remove from heat, and add curry cubes (mix for 10 min)
Fun Fact:
Studies have shown that curry is a strong aphrodisiac and that one can actually develop an "addiction" to it.  "I swear the curry powder's not mine! I'm just holding it for a friend"
